Preparation

  • Begin with skinned, boneless chicken breasts or thighs. Season them with salt, pepper, and optional garlic powder or Italian herbs.
  • Let the chicken sit at room temperature for 15 minutes.

Searing Chicken

  • Heat a large skillet over medium-high heat and add olive oil.
  • Place the chicken in the pan without overcrowding. Sear for 6-7 minutes on each side until golden and crusty.
  • Remove the chicken and set aside after browning.

Creating the Sauce

  • In the same skillet, lower the heat to medium and add pesto, heavy cream, and diced tomatoes.
  • Mix well to create a creamy sauce and simmer for 5 minutes to let the flavors blend.
  • Add the chicken back to the skillet and coat it well with the sauce.

Notes

For dairy-free options, replace heavy cream with coconut milk. Feel free to add colorful veggies like cherry tomatoes, bell peppers, or spinach to enhance the dish.
