- 12 oz rigatoni pasta
- 1 lb Italian sausage mild or spicy, casings removed
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 can 14.5 oz diced tomatoes (optional for a tomato-cream version)
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- Fresh basil or parsley for garnish
Cook rigatoni according to package directions in salted water until al dente. Drain and set aside.
In a large skillet over medium heat, cook the sausage, breaking it up with a spoon, until browned and cooked through.
Add chopped onion and cook until softened, about 3–4 minutes.
Stir in garlic and cook for 1 more minute.
Add heavy cream and Parmesan cheese. If using diced tomatoes, add them here along with the Italian seasoning.
Simmer for 5–7 minutes until the sauce thickens slightly.
Season with salt and pepper to taste.
Toss in the cooked rigatoni and stir to coat evenly with the sauce.
Serve hot, garnished with chopped parsley or basil.
