Ingredients
  

  • 12 oz rigatoni pasta
  • 1 lb Italian sausage mild or spicy, casings removed
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 can 14.5 oz diced tomatoes (optional for a tomato-cream version)
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions
 

  • Cook rigatoni according to package directions in salted water until al dente. Drain and set aside.
  • In a large skillet over medium heat, cook the sausage, breaking it up with a spoon, until browned and cooked through.
  • Add chopped onion and cook until softened, about 3–4 minutes.
  • Stir in garlic and cook for 1 more minute.
  • Add heavy cream and Parmesan cheese. If using diced tomatoes, add them here along with the Italian seasoning.
  • Simmer for 5–7 minutes until the sauce thickens slightly.
  • Season with salt and pepper to taste.
  • Toss in the cooked rigatoni and stir to coat evenly with the sauce.
  • Serve hot, garnished with chopped parsley or basil.
