- ½ lb shrimp peeled and deveined; fresh or thawed
- ½ lb fettuccine pasta
- 2 Tbsp butter divided
- 4 cloves garlic minced
- 1 cup heavy cream
- ¾ cup Parmesan cheese grated
- ⅛ tsp salt to taste
- ¼ tsp black pepper to taste
- 1 Tbsp fresh parsley chopped, optional garnish
Prep shrimp and pasta: Thaw shrimp if frozen and pat dry. Bring salted water to boil, cook fettuccine 7–10 min until al dente. Reserve ½ cup pasta water, then drain.
Cook shrimp: In a skillet, melt 1 Tbsp butter over medium heat. Add shrimp, season with salt & pepper, and cook 1–2 min per side until pink and opaque. Remove and set aside.
Make Alfredo sauce: In same skillet, melt remaining butter, add garlic and sauté ~1 min. Pour in heavy cream, bring to simmer. Stir in Parmesan gradually until melted and sauce thickens.
Combine pasta & sauce: Mix cooked fettuccine into sauce, adding reserved pasta water as needed for desired consistency.
Finish: Return shrimp to skillet and toss gently to coat. Garnish with parsley if using. Serve immediately.
