  • 1 package strawberry cake mix, plus ingredients specified on packaging
  • 225 grams softened cream cheese Ensure well softened for a smooth mixture.
  • 65 grams powdered sugar
  • 5 milliliters vanilla extract
  • 150 grams fresh strawberries, mashed You can use fresh, ripe strawberries for best flavor.
  • 65 grams granulated sugar
  • 15 milliliters lemon juice
  • 3 grams cornstarch, mixed with 15 milliliters water
  • to taste Fresh strawberry slices
  • to taste White chocolate, melted for drizzling You can substitute dark or milk chocolate if preferred.

Preparation

  • Preheat your oven to 175°C. Grease a 23×33-centimeter baking pan evenly.
  • Prepare the strawberry cake mix according to the directions on the package. Pour the prepared batter into the greased baking pan.
  • In a bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until the mixture is smooth and creamy.
  • Drop spoonfuls of the cream cheese mixture over the cake batter. Use a knife to gently swirl it around to create a marbled effect.

Baking

  • Bake the cake on the center rack for about 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan.

Glaze Preparation

  • In a small saucepan over medium heat, mix the mashed strawberries, granulated sugar, and lemon juice. Stir occasionally until the mixture starts to simmer.
  • Add the cornstarch-water mixture, stirring until it thickens slightly. Remove from heat and allow it to cool to room temperature.

Assembly

  • Pour the cooled strawberry glaze over the completely cooled cake. Top with fresh strawberry slices and drizzle melted white chocolate over it before serving.

Notes

Serve chilled or at room temperature. Pairs well with whipped cream or ice cream. Store in an airtight container in the refrigerator for 3 to 4 days; freeze without fresh strawberry slices and glaze for longer storage.
