Ingredients
  

  • 4 boneless skinless chicken thighs or breasts
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh basil or parsley for garnish (optional)

Instructions
 

  • Season chicken with salt and pepper.
  • In a large skillet over medium heat, heat olive oil. Add chicken and sear for 5–6 minutes per side until browned and cooked through. Remove and set aside.
  • In the same skillet, sauté diced onion until soft, then add garlic and cook for 1 more minute.
  • Add diced tomatoes (with juice), Italian seasoning, and simmer for 5 minutes.
  • Stir in heavy cream and Parmesan cheese, and simmer until sauce thickens slightly.
  • Return chicken to the skillet and coat with the sauce. Simmer for 3–4 minutes.
  • Garnish with chopped basil or parsley and serve hot with your choice of side.
