  • 2 cups Fresh tomatoes, diced Use San Marzano or cherry tomatoes for the best flavor.
  • 1 cup Ricotta cheese Choose a high-quality ricotta for creaminess.
  • 2 cloves Garlic, minced Add more for enhanced flavor.

Seasonings and Garnishes

  • 1 tbsp Olive oil For sautéing garlic.
  • ¼ cup Fresh basil, chopped For garnish and flavor.
  • 1 tsp Oregano
  • ¼ tsp Red pepper flakes Adjust based on spice preference.
  • ½ cup Grated Parmesan cheese For serving.

Preparation

  • Dice fresh tomatoes and mince the garlic.
  • Set a pot of salted water to boil for the pasta.
  • Drain the ricotta to remove excess liquid.

Cooking

  • Cook the pasta al dente according to package instructions, approximately 8–10 minutes.
  • In a skillet, heat olive oil over medium heat and sauté the minced garlic until golden.
  • Add the diced tomatoes and simmer for 15-20 minutes until they soften.
  • Stir the ricotta into the skillet, mixing until creamy.

Finalizing the Dish

  • Combine the cooked pasta with the sauce. If too thick, reserve some pasta water to adjust consistency.
  • Season with oregano, red pepper flakes, and adjust with salt if needed.
  • Serve hot, garnished with fresh basil and grated Parmesan.

Notes

This dish can easily be adapted by adding vegetables like broccoli or shrimp for added nutrition. Always taste and adjust seasonings as you go.
