Instructions
 

Cooking the Chicken

  • Season the chicken breasts with Italian herbs like oregano, thyme, and basil.
  • Heat a skillet over medium-high heat and add olive oil.
  • Sear the chicken until golden brown on both sides, about 5-7 minutes per side.
  • Remove the chicken from the skillet and let it rest.

Making the Tuscan Sauce

  • In the same skillet, cook chopped onions and minced garlic until soft.
  • Add sun-dried tomatoes and cook for a few more minutes.
  • Add fresh spinach and stir until it wilts.
  • Pour in heavy cream and sprinkle with Parmesan cheese, stirring well.

Finishing Touch

  • Return the chicken to the skillet and let it simmer in the sauce for a few minutes.

Notes

For a dairy-free version, substitute coconut or cashew cream. You can also use chicken thighs for a juicier option. Experiment with spices and vegetables for variations.
