- 1 tablespoon olive oil or oil from sun-dried tomatoes

- 4 cloves garlic minced
- ½ cup diced onion
- ⅓ cup dry white wine or chicken broth

- ½ cup sun-dried tomatoes chopped
- 2 cups cherry tomatoes halved
- 2 cups baby spinach
- 1 cup heavy cream or full-fat coconut milk
- ¼ cup grated Parmesan cheese

Prepare the Chicken: Season both sides of the chicken cutlets with salt, pepper, and Italian seasoning.
