Ingredients
  

  • 4 cod fillets about 6 oz each
  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • ½ cup sun-dried tomatoes chopped
  • 1 cup cherry tomatoes halved
  • 2 cups baby spinach
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Season cod with salt and pepper, then sear on each side for 2–3 minutes until lightly golden. Remove and set aside.
  • In the same skillet, sauté garlic until fragrant, then add sun-dried tomatoes and cherry tomatoes.
  • Stir in heavy cream, Parmesan, and Italian seasoning. Simmer until slightly thickened.
  • Add spinach and cook until wilted.
  • Return cod to the skillet and simmer for 5–6 minutes, or until the fish flakes easily with a fork.
  • Garnish with fresh basil or parsley and serve immediately.
