- 4 cod fillets about 6 oz each
- 2 tablespoons olive oil
- 3 garlic cloves minced
- ½ cup sun-dried tomatoes chopped
- 1 cup cherry tomatoes halved
- 2 cups baby spinach
- 1 cup heavy cream
- ¼ cup grated Parmesan cheese
- ½ teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Heat olive oil in a large skillet over medium heat.
Season cod with salt and pepper, then sear on each side for 2–3 minutes until lightly golden. Remove and set aside.
In the same skillet, sauté garlic until fragrant, then add sun-dried tomatoes and cherry tomatoes.
Stir in heavy cream, Parmesan, and Italian seasoning. Simmer until slightly thickened.
Add spinach and cook until wilted.
Return cod to the skillet and simmer for 5–6 minutes, or until the fish flakes easily with a fork.
Garnish with fresh basil or parsley and serve immediately.
