Main Ingredients

  • 4 pieces Cod fillets Fresh or thawed if using frozen
  • ½ cup Sun-dried tomatoes Chopped for easy mixing
  • 3 cloves Garlic Finely chopped
  • 1 cup Heavy cream Can be substituted with coconut cream for dairy-free
  • 2 cups Fresh spinach Can replace with kale if preferred
  • 2 tablespoons Olive oil For frying the cod
  • ½ cup Parmesan cheese Grated, can substitute with nutritional yeast for dairy-free
  • to taste Salt and pepper Use Italian seasoning as desired

Instructions
 

Preparation

  • Clean and dry the cod fillets, then sprinkle with salt and pepper.
  • Chop the garlic and gather all other ingredients.

Cooking

  • Heat a large skillet over medium-high heat and add olive oil.
  • Cook the seasoned cod fillets in the skillet until golden brown, about 3-4 minutes on each side.
  • Add chopped garlic, spinach, and sun-dried tomatoes to the skillet and sauté until fragrant.
  • Pour in the heavy cream and mix to create a creamy sauce that coats the cod.
  • Serve hot with a sprinkle of parmesan cheese on top.

Notes

For a dairy-free version, use coconut cream instead of heavy cream and nutritional yeast instead of parmesan cheese. Pair with wild rice, quinoa, or a fresh salad.
