  • 1 cup pecans, toasted Toast in a dry skillet for enhanced flavor.
  • ½ cup feta cheese, crumbled Can be replaced with goat cheese or omitted for a dairy-free version.
  • ¼ cup red onion, thinly sliced Adjust quantity based on preference.

Vinaigrette Ingredients

  • ½ cup apple cider
  • ¼ cup olive oil Can reduce amount for a lighter option.
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey Use a plant-based sweetener for a vegan version.
  • Salt and pepper, to taste

Preparation

  • In a large bowl, combine mixed greens, diced apples, toasted pecans, crumbled feta cheese, and thinly sliced red onion.
  • In a separate bowl, whisk together the apple cider, olive oil, Dijon mustard, honey, salt, and pepper to create the vinaigrette.
  • Drizzle the vinaigrette over the salad and toss gently to coat everything evenly.

Notes

Store any leftover salad in an airtight container in the refrigerator, but keep the vinaigrette separate to prevent wilting. Best enjoyed fresh, but will last in the fridge for up to 1 day. Add grilled chicken or shrimp for a heartier meal.
