  • 2 cup all-purpose flour
  • 1 tbsp baking powder fresh
  • 2 tbsp granulated sugar
  • ½ tsp salt
  • 2 large eggs
  • 1 ½ cup whole milk
  • ½ cup unsalted butter melted and cooled slightly
  • 1 tsp vanilla extract
  • cooking spray or melted butter for the waffle iron

Instructions
 

Cooking

  • Whisk the flour, baking powder, sugar, and salt in a medium bowl.
  • In a second bowl, beat the eggs, then stir in the milk, melted butter, and vanilla.
  • Pour the wet mixture into the dry mixture and stir just until the flour streaks disappear. Do not overmix.
  • Preheat the waffle iron until ready and lightly grease the plates.
  • Pour about 1/2 cup of batter onto the center, close the lid, and cook until steam stops escaping and the waffle is deep golden brown.
  • Move the waffle to a wire rack for about 30 seconds to stay crisp, and repeat with the remaining batter.

Notes

Makes about 8 waffles, 2 per serving. Store up to 3 days in the refrigerator and reheat in a toaster. Nutrition is an estimate without toppings.
