For the Fries

  • 2 medium zucchinis, cut into fries
  • ½ cup all-purpose flour Can be substituted with gluten-free flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs For extra crunch
  • ½ cup grated Parmesan cheese Feel free to experiment with different types of cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • Olive oil spray Essential for crispiness

Preparation

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Set up a breading station: Place the flour in one bowl, the beaten eggs in another, and mix the panko breadcrumbs with Parmesan cheese, garlic powder, paprika, salt, and pepper in a third bowl.
  • Dip each zucchini fry first in the flour, then in the egg, and finally in the breadcrumb mixture, pressing gently to adhere.
  • Arrange the coated zucchini fries on the prepared baking sheet. Spray lightly with olive oil.

Baking

  • Bake for 20-25 minutes, or until golden brown and crispy.
  • Serve immediately with your favorite dipping sauce.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes until hot and crispy again. For a spicy kick, add cayenne pepper or chili powder to the breadcrumb mixture.
