For the Meat Filling

  • 750 g Ground Beef Main meat component
  • 1 medium Onion, diced Adds depth and sweetness

  • 250 ml Beef Stock Moistens and enriches flavor

For the Potato Topping

  • 4 large Floury potatoes, sliced thinly Use Russets or Maris Pipers for best results
  • 2 tbsp Melted Butter To brush on the potato slices
  • 1 tsp Salt For flavor

Instructions
 

Prepare the Meat Filling

  • Sauté diced onions, celery, carrots, and thyme in olive oil until softened.
  • Add ground beef, breaking it up as it browns.
  • Stir in tomato paste and cook for another minute.
  • Sprinkle flour over the mixture and stir well.
  • Slowly add red wine vinegar and beef stock, stirring to combine.
  • Let it simmer until the mixture thickens and is flavorful.

Prepare the Potato Topping

  • Preheat your oven to 400°F (200°C).
  • Layer potato slices in a baking dish, brushing each layer with melted butter.
  • Sprinkle salt over the potato layers.

Assemble and Bake the Pie

  • Spread the meat filling evenly in a baking dish.
  • Place the layered potato slices on top of the meat filling.
  • Cover with aluminum foil and bake for 30 minutes.
  • Remove the foil and continue baking for another 30 minutes, or until the potatoes are golden and crispy.

Notes

For added flavor, consider mixing in some vegetables like peas or mushrooms into the meat filling. Using a mandoline for slicing the potatoes helps achieve even thickness. You can also prepare the filling a day in advance to enhance the flavor.
