  • 2 cans Drained canned tuna
  • 2 large Eggs
  • ¼ cup Mayo
  • 1 cup Panko breadcrumbs
  • 2 cloves Garlic Minced
  • ¼ cup Parsley Chopped
  • ½ medium Onion Finely chopped

Optional Additions for Extra Flavor

  • 1 teaspoon Lemon zest
  • ½ teaspoon Red pepper flakes
  • 1 teaspoon Smoked paprika
  • ½ cup Chopped bell peppers

Preparation

  • Open the canned tuna and drain well to remove excess liquid.
  • In a large mixing bowl, combine canned tuna, panko breadcrumbs, chopped onion, and eggs. Add salt, pepper, and any optional spices. Mix well until evenly distributed.
  • Shape the mixture into patties about the size of your palm. For added crunch, dip each patty in panko breadcrumbs before cooking.

Cooking

  • Heat a skillet over medium heat and add a teaspoon of oil.
  • Once the oil is hot, place the patties in the skillet. Cook for 3-4 minutes on each side until golden brown and crispy.

Notes

Store leftover patties in the fridge for up to two days in an airtight container. For longer storage, freeze the uncooked patties in a freezer-safe bag for up to two months.
