  • 1.5 lbs boneless, skinless chicken breasts Trim excess fat before cooking.
  • 10.5 oz cream of chicken soup
  • 10.5 oz cream of mushroom soup
  • 1 oz Lipton onion soup mix
  • 2 cups Minute brand rice Parboiled for slow cooking.
  • 1 can water (from the soup cans)
  • ½ tsp garlic powder
  • ¼ tsp black pepper

Optional Ingredients for Extra Flavor

  • 1 can drained black beans For a chicken rice beans variation.
  • to taste fresh herbs like parsley or thyme For added flavor.
  • 1 cup chopped vegetables (e.g., carrots, bell peppers) To add nutrition and color.

Instructions
 

Preparation

  • Trim excess fat off the chicken breasts and pat them dry.
  • In a large bowl, mix the cream of chicken soup, cream of mushroom soup, water, garlic powder, and black pepper.
  • Spray the slow cooker with non-stick spray and layer half of the rice mixture at the bottom.
  • Place the chicken breasts on top and cover with the remaining rice mixture. Sprinkle the onion soup mix over all.

Cooking

  • Set your slow cooker on low for 6 to 8 hours or on high for 3 to 4 hours.

Notes

Avoid opening the lid during cooking for best results. If using large chicken breasts, consider slicing them to promote even cooking.
