- 4 boneless skinless chicken breasts
- 1 cup long grain white rice uncooked
- 1 can 10.5 oz cream of chicken soup
- 1 can 10.5 oz cream of mushroom soup
- 1 can 10.5 oz water or chicken broth (use soup can to measure)
- 1 envelope dry onion soup mix
- Salt and pepper to taste
- Optional: parsley for garnish
Lightly grease the crockpot insert.
Spread the uncooked rice evenly on the bottom of the crockpot.
In a bowl, whisk together cream of chicken soup, cream of mushroom soup, and water or broth until smooth.
Pour the soup mixture over the rice and gently stir.
Place chicken breasts on top of the rice mixture.
Sprinkle the dry onion soup mix evenly over the top.
Cover with the lid and do not lift it during cooking ("no peek").
Cook on low for 6 hours, or until chicken is cooked through and rice is tender.
Optional: Garnish with chopped parsley before serving.
