  • 3 lb beef chuck roast cut into large chunks
  • 1 cup barbecue sauce
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 hamburger buns
  • coleslaw optional, for topping

Cooking

  • Place the chuck roast chunks in the slow cooker.
  • Stir together the barbecue sauce, onion, garlic, salt, and pepper. Pour over the beef and turn to coat.
  • Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the beef is very tender.
  • Remove any large pieces of fat, shred the beef with two forks, and stir it into the sauce.
  • Pile the beef onto the buns and top with coleslaw if desired.

Notes

Refrigerate leftover beef within two hours in shallow containers and store the buns separately. The meat keeps three to four days. Reheat on the stove or in the microwave until steaming hot. Nutrition is an estimate per sandwich and includes the bun.
