Activate Yeast: In a large mixing bowl, combine warm water, sugar, and active dry yeast. Stir and let sit for about 10 minutes until the mixture becomes frothy.
Prepare Dough: Add flour and salt to the yeast mixture. Stir until a dough forms. If the dough is too sticky, add a small amount of flour; if too dry, add a bit more water.
First Rise: Cover the bowl with plastic wrap or a clean kitchen towel. Let the dough rise at room temperature for about 1 hour, or until it has doubled in size.
Shape Dough: Turn the dough out onto a lightly floured surface. Gently shape it into a round loaf.
Prepare Crockpot: Line the bottom of the crockpot with parchment paper. Place the shaped dough onto the parchment.
Second Rise: Cover the crockpot with its lid and let the dough rise for an additional 30 minutes.
Bake: Set the crockpot to the "High" setting. Bake the bread for approximately 2 hours, or until the internal temperature reaches 190°F (88°C).
Optional Browning: For a golden crust, preheat your oven broiler. Once the bread is baked, transfer it (without the parchment) to a baking sheet and broil for 2–3 minutes, watching closely to prevent burning.
Cool: Remove the bread from the crockpot and let it cool on a wire rack for at least 30 minutes before slicing.
