Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts Use fresh or thawed chicken for best results.

For the Broth and Seasoning

  • ½ cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt Adjust to taste.
  • ½ teaspoon onion powder Can use fresh onion instead.
  • ½ teaspoon dried thyme
  • ½ teaspoon ground paprika
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon garlic powder

Instructions
 

Preparation

  • Pour the chicken broth into the slow cooker.
  • In a small bowl, combine the kosher salt, onion powder, dried thyme, ground paprika, black pepper, and garlic powder.
  • Rub the olive oil and seasoning mixture over the chicken breasts.
  • Place the seasoned chicken breasts in the slow cooker on top of the chicken broth.

Cooking

  • Cook on high for 3-4 hours or on low for 4-6 hours until the chicken is cooked through and tender.

Notes

For added flavor, consider marinating the chicken in the seasoning overnight before cooking. Check the chicken for doneness, as cooking times may vary based on your slow cooker model. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
