  • 2 tablespoons Butter
  • 1 pound Ground beef Browned before adding to the soup
  • 1 cup Onion, chopped Cook until transparent
  • 1 cup Carrot, diced
  • 1 cup Potatoes, diced
  • ½ cup Green pepper or Celery, chopped (optional) Can be omitted
  • 1 cup Tomato juice
  • 1 ½ teaspoons Salt
  • teaspoon Black pepper
  • 1 teaspoon Seasoned salt
  • 4 cups Milk, divided
  • cup Flour To thicken the soup

Preparation

  • Melt the butter in a slow cooker and brown the ground beef.
  • Add the chopped onion and cook until it is transparent.
  • Stir in the chopped carrots, diced potatoes, and the optional green pepper or celery.
  • Then add the tomato juice, salt, black pepper, and seasoned salt.
  • Cover the slow cooker and cook over low heat for 20-25 minutes until the vegetables are tender.
  • In a separate bowl, mix the flour with 1 cup of milk, then stir this mixture into the soup.
  • Bring to a boil, then add the remaining milk while stirring often, but do not let it boil.
  • Serve hot and enjoy your delicious soup!

Notes

For extra flavor, try adding herbs like thyme or parsley. If you want a thicker soup, add more flour mixed with milk during the cooking process.
