  • 1 lb Chicken (thighs or breasts) Thighs are recommended for flavor and tenderness.
  • 1 lb Baby potatoes Yukon Gold or other small varieties work well.
  • 4 cloves Minced garlic Adds strong flavor and health benefits.
  • ½ cup Parmesan cheese Grated for best integration into sauce.
  • ¼ cup Unsalted butter Can be substituted with olive oil for a lighter version.
  • 2 teaspoons Italian seasoning blend Or use other preferred herbs.
  • 1 cup Chicken broth To keep the dish moist.

Instructions
 

Preparation

  • Wash and halve the baby potatoes to ensure even cooking.
  • In a bowl, mix melted butter, minced garlic, grated Parmesan cheese, and Italian seasoning.

Assembly

  • Place the halved potatoes in the bottom of the crockpot.
  • Spread the seasoned chicken on top of the potatoes.
  • Pour the garlic Parmesan mixture over the chicken and add the chicken broth.

Cooking

  • Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
  • Ensure the chicken reaches an internal temperature of at least 165°F before serving.

Notes

Feel free to add seasonal vegetables for enhanced nutrition. For crispy skin, broil chicken for 2 minutes after cooking.
