Ingredients
  

For the Chili

  • 1 pound ground beef Use lean ground beef to reduce excess fat.
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) chili beans in sauce
  • 1 can (14 ounces) diced tomatoes with green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced For extra flavor, sauté the onions and garlic in the skillet after browning the beef.
  • 2 tablespoons chili powder Adjust the level of spices to taste.
  • 1 tablespoon cumin
  • to taste salt
  • to taste pepper

For Serving

  • Hot dogs For serving.
  • Chopped onions, cheese, and other toppings (optional) Customize topping choices for guests.

Instructions
 

Preparation

  • In a skillet, brown the ground beef over medium heat, then drain the excess fat.
  • In a crockpot, combine the browned beef, kidney beans, chili beans, diced tomatoes, chopped onion, garlic, chili powder, cumin, and season with salt and pepper.

Cooking

  • Stir everything together, cover, and cook on low for 6 to 8 hours or on high for 3 to 4 hours.

Serving

  • Serve the hot dog chili over grilled hot dogs, and top with chopped onions, cheese, and desired toppings.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. For longer storage, freeze in freezer-safe bags or containers for up to three months. Thaw and reheat when ready to eat. Feel free to add more beans for a heartier chili.
