Ingredients
  

  • 1 lb beef stew meat or ground beef
  • 3 cups beef broth
  • 1 14.5 oz can diced tomatoes
  • 3 cups mixed vegetables frozen or fresh: carrots, peas, corn, green beans
  • 2 potatoes peeled and diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Brown the beef in a skillet over medium heat (optional, for added flavor), then drain.
  • Add beef, broth, tomatoes, vegetables, potatoes, onion, and garlic to the crockpot.
  • Stir in Italian seasoning, salt, and pepper.
  • Cover and cook on low for 8 hours or high for 4–5 hours, until vegetables are tender.
  • Stir and adjust seasoning before serving.
