  • 8 pieces chicken drumsticks
  • ½ cup plain/all-purpose flour
  • 3 large eggs, beaten
  • 1 cup panko breadcrumbs For extra crunch

Seasoning

  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 1 tsp garlic powder
  • 1 ½ tsp smoked paprika
  • 1 ½ tsp cayenne pepper or pure chilli powder Omit for kid-friendly version
  • 1 ½ tsp cooking salt
  • 2 tsp black pepper Reduce to 1/2 tsp for kid-friendly

Oils

  • as needed Canola oil spray (or other oil)

Preparation

  • Preheat your oven to 200°C/400°F (180°C fan). Line a tray with foil and place a rack on top. Spray the rack with oil.
  • Prepare your crumbing bowls: Place the flour, whisked eggs, and panko breadcrumbs into three separate medium bowls.
  • In a small bowl, mix all the seasoning ingredients. Put 1 tablespoon of the seasoning into the flour and the rest into the panko, mixing well.
  • Pat the drumsticks dry with paper towels. First, coat them in the flour mixture, shaking off the excess. Then, dip in the egg, letting any excess egg drip off. Finally, roll them in the panko breadcrumbs, pressing gently so the crumbs stick well all over, including the handle.
  • Place the coated drumsticks on the prepared rack. Spray them generously with oil.

Cooking

  • Bake for 25 minutes. After 25 minutes, turn the drumsticks over, spray again with oil, and bake for another 20 minutes until they are golden brown and super crunchy!

Notes

For extra flavor, let the chicken marinate in the seasoning for a few hours before breading. If you want an even crunchier coating, try double-dipping the drumsticks in the egg and panko. Make sure not to overcrowd the baking rack to prevent the drumsticks from getting crisp.
