Ingredients
  

Vegetables

  • 1 cup cucumbers, sliced Use fresh cucumbers for the best flavor.
  • 1 cup carrots, sliced Snap off the ends before slicing.
  • 1 cup bell peppers, sliced Any color bell pepper can be used.
  • 1 cup onions, sliced Red or yellow onions work well.

Vinegar Dressing

  • 1 cup vinegar Use white or apple cider vinegar.
  • 1 tablespoon sugar Adjust according to sweetness preference.
  • 1 tablespoon salt Sea salt or kosher salt recommended.
  • 1 teaspoon dill Fresh or dried dill can be used.
  • ½ teaspoon garlic powder Fresh garlic can be chopped as a substitute.

Instructions
 

Preparation

  • Combine the cucumbers, carrots, bell peppers, and onions in a large bowl.
  • In a separate bowl, mix the vinegar, sugar, salt, dill, and garlic powder until dissolved.
  • Pour the vinegar mixture over the vegetables and toss gently to coat.
  • Cover the bowl and refrigerate for at least 2 hours.

Serving

  • Serve chilled and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for about a week. Slicing vegetables uniformly ensures even pickling.
