  • ½ lb extra lean ground beef
  • 1 tbsp taco seasoning
  • 8 large flour tortillas 4 for cutting and 4 for wrapping
  • ½ cup jarred nacho cheese sauce or queso
  • 4 tostadas
  • ½ cup sour cream
  • 1 cup shredded iceberg lettuce
  • 1 plum tomato deseeded and diced
  • 1 cup shredded cheddar cheese
  • cooking spray for toasting

  • Cook the beef with the taco seasoning over medium high heat for 7 to 8 minutes, until fully cooked.
  • Stack 4 tortillas, set a tostada on top, and cut around it with scissors leaving about 1/2 inch of space to make 4 small circles.
  • Place some beef in the center of a large tortilla, drizzle with 1 to 2 tablespoons cheese sauce, and top with a tostada.
  • Spread with sour cream, add lettuce, tomato, and cheddar, and top with a small tortilla circle.
  • Fold the edges of the large tortilla up and over the small circle. Repeat to make 4 wraps.
  • Cook each wrap seam side down in a skillet sprayed with cooking spray over medium heat for 2 to 3 minutes per side, until lightly browned. Cut in half.

Notes

Best served fresh so the tostada stays crisp. Cook ground beef to 160 degrees F. Refrigerate leftover beef and assemble new wraps when ready. Nutrition is an estimate per wrap.
