  • 1 medium onion (sliced in half-wedges)
  • 1 tsp salt Adjust seasoning to taste.
  • ¼ tsp black pepper Adjust seasoning to taste.
  • ¾ cup sour cream Can substitute with Greek yogurt for a lighter version.
  • 1 tbsp white distilled vinegar

Preparation

  • Wash the cucumbers thoroughly. Cut off the ends and slice them into thin rounds.
  • In a large bowl, combine the sliced cucumbers and onion.
  • Sprinkle the salt and black pepper over the vegetables. Toss gently to combine.
  • In a small bowl, mix the sour cream and white distilled vinegar together.
  • Pour the sour cream mixture over the cucumbers and onions. Stir well to coat everything evenly.
  • Let the salad sit for about 30 minutes in the refrigerator before serving to blend the flavors.

Notes

Serve chilled as a side dish. Store leftovers in an airtight container and consume within 2-3 days for best taste. Drain excess liquid if it becomes watery.
