  • 3 cups Persian Cucumbers Substitute with Japanese cucumbers if not available.
  • 8 oz Imitation Crab Meat Shred into small pieces.

Dressing Ingredients

  • ½ cup Mayo Adjust for desired creaminess.
  • 1 tbsp Vinegar Adjust to taste.
  • 1 tsp Garlic Powder
  • 1 tbsp Sugar
  • ¼ tsp Pepper Freshly cracked.
  • 1 tbsp Sesame Seeds Or fresh herbs like dill or cilantro.

Preparation

  • Wash the cucumbers thoroughly and slice them thinly for the best texture.
  • In a large bowl, combine the sliced cucumbers and shredded imitation crab meat.
  • In a separate bowl, mix together the mayo, vinegar, garlic powder, sugar, and pepper to create the dressing.
  • Pour the dressing over the cucumber and crab mixture and toss everything together until well coated.
  • Sprinkle sesame seeds or fresh herbs over the top for added flavor and garnish.
  • Serve immediately or let it chill in the fridge for about 30 minutes to enhance the flavors.

Notes

For extra crunch, add diced bell peppers or red onions. If you prefer a tangier flavor, add more vinegar to the dressing. For a healthier version, use Greek yogurt instead of mayo. Make the salad a few hours ahead of time to allow the flavors to meld.
