  • 2 cups chopped dates Medjool dates are recommended for moisture.
  • ½ cup butter Can be substituted with olive oil.
  • 1 teaspoon baking soda Activated by hot coffee in the mixture.
  • ¼ teaspoon salt
  • 1 cup brown sugar
  • 1 cup hot brewed coffee Enhances the flavor of dates.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can be replaced with whole grain flour.
  • 1 cup walnuts Can substitute with pecans.

Preparation

  • Chop the dates and soak them in hot coffee mixed with baking soda. Let the mixture cool.

Combining Ingredients

  • In a bowl, mix the wet ingredients: egg, melted butter, and vanilla extract.
  • Once the date mixture has cooled, add it to the wet mixture, then gradually add the dry ingredients (flour, salt, and brown sugar). Mix gently until smooth without overmixing.

Baking

  • Preheat your oven to 350°F (175°C). Grease a loaf pan and pour in the batter.
  • Bake for 45 to 55 minutes, covering with foil if it browns too fast. Check if done by inserting a toothpick; it should come out clean.

Notes

Let the bread cool completely before wrapping it in plastic wrap or foil. Store it at room temperature for several days, or in the fridge for up to a week. For best results, enjoy it with cream cheese or toasted with butter.
