  • 12 pieces medjool dates Fresh and soft
  • ¼ cup creamy peanut butter Or another nut butter of choice
  • ¼ cup chopped roasted peanuts For added crunch
  • 4 ounces dark chocolate For coating, can be adjusted based on dietary preferences

Preparation

  • Start by cutting a slit in each medjool date with a small knife. Don't cut all the way through; this makes a pocket for fillings. Then, remove the pit carefully.
  • After preparing the dates, fill them with peanut butter using a spoon or knife. Don't overfill to avoid spills later.

Melting and Dipping

  • Melt the chocolate by heating chocolate chips in a microwave-safe bowl in short bursts, stirring often until smooth.
  • Dip each stuffed date in the melted chocolate, ensuring it is fully coated. Use a fork to remove it, allowing excess chocolate to drip off. Place the dipped date on a parchment-lined tray.

Setting

  • Let all the dates set in the fridge for 30 minutes to harden the chocolate.

Notes

For added texture and taste, you can incorporate other nuts or fillings like almonds, walnuts, or pecans. Different chocolate options allow for versatility in flavor as well.
