- 4 boneless skinless chicken breasts
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 4 cloves garlic minced
- 5 medium ripe tomatoes chopped
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes optional
- Fresh basil leaves chopped (plus more for garnish)
- Grated Parmesan cheese for serving (optional)
Season chicken breasts with salt and pepper.
In a large skillet over medium heat, warm olive oil. Add chicken and sear for 5–6 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, sauté garlic for 1 minute until fragrant.
Add chopped tomatoes, tomato paste, oregano, and red pepper flakes. Simmer for 10–12 minutes until tomatoes break down and sauce thickens.
Stir in fresh basil and return chicken to the pan. Spoon sauce over the chicken and simmer for 5 more minutes.
Garnish with additional basil and Parmesan cheese if desired. Serve with pasta, rice, or crusty bread.
