  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, sliced
  • 2 tablespoons Dijon mustard
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • Heat the olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt and pepper.
  • Place the chicken in the skillet and cook for 5-7 minutes on each side, or until golden brown and cooked through.
  • Remove the chicken from the skillet and set it aside.
  • In the same skillet, add the minced garlic and sliced mushrooms. Cook until the mushrooms have softened.
  • Stir in the Dijon mustard and heavy cream, mixing until well combined.
  • Return the chicken to the skillet and let it simmer in the sauce for a few minutes until warmed through.
  • Garnish with fresh parsley before serving.

Notes

For extra flavor, you can marinate the chicken in Dijon mustard for 30 minutes before cooking. If you want a thicker sauce, let it simmer for a little longer to reduce the cream. Feel free to add other herbs, like thyme or rosemary, for more flavor. To store leftovers, place the chicken and sauce in an airtight container. It can be kept in the refrigerator for up to 3 days. To reheat, simply warm it up in a skillet over low heat until heated through.
