  • 1 lb ground beef You can use ground turkey or chicken for a lighter option.
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese Divided into two portions for topping.
  • 1 cup cooked rice You can use brown rice if preferred.
  • 1 cup frozen mixed vegetables Feel free to mix in other vegetables, like bell peppers or spinach.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef until it is browned and fully cooked. Drain any excess fat.
  • In a large bowl, combine the cooked beef, cream of mushroom soup, cooked rice, frozen mixed vegetables, and half of the shredded cheddar cheese. Mix everything well.

Assembly and Cooking

  • Transfer the mixture to a greased casserole dish and spread it evenly.
  • Top the casserole with the remaining cheddar cheese.
  • Bake in the oven for 25–30 minutes, or until the cheese is melted and bubbly.

Notes

Serve the casserole hot, perfect on its own or with salad or garlic bread. To store leftovers, let cool completely and refrigerate for up to 3 days or freeze for longer storage. Thaw overnight before reheating.
