Preparation

  • Slice the cucumber into thin rounds or half-moons.
  • In a large bowl, mix the diced imitation crab sticks, diced avocado, Kewpie mayo, whipped cream cheese, and soy sauce together.
  • Add the cucumber slices to the mixture and gently toss until evenly coated.
  • Sprinkle with toasted sesame seeds and serve chilled.

Notes

This salad can be stored in an airtight container in the refrigerator for 1-2 days. Add a splash of rice vinegar for extra flavor. Use a mandoline for thin cucumber slices and gently toss to avoid mashing the avocado.
