Main Ingredients

  • 8 oz short pasta rotini, shells or penne
  • 1 lb ground beef or ground turkey
  • 1 packet (1 oz) taco seasoning
  • 1 cup diced tomatoes canned or fresh
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 2 cup shredded cheese a blend works well
  • 2 cup low-sodium chicken or vegetable broth
  • salt and pepper to taste
  • chopped cilantro for garnish

Cooking

  • In a large pot, cook the ground beef or turkey over medium heat until browned and cooked through (160 degrees F for beef, 165 degrees F for turkey). Drain the excess fat.
  • Stir in the taco seasoning and cook for about 1 minute.
  • Add the pasta, diced tomatoes, black beans, corn and broth. Stir well and bring to a boil.
  • Reduce the heat, cover, and simmer for about 10 to 12 minutes, stirring now and then, until the pasta is cooked.
  • Take the pot off the heat and stir in the cheese until melted.
  • Season with salt and pepper, garnish with cilantro and serve.

Notes

Use low-sodium broth because taco seasoning and cheese are already salty. Refrigerate leftovers within 2 hours, eat within 3 to 4 days, and reheat to 165 degrees F with a splash of broth. Nutrition values are an estimate.
