  • 2 cups cooked, shredded rotisserie chicken You can use leftover chicken too.
  • 1 can cream of chicken soup Substitutions like sour cream can be used.
  • 1 cup frozen mixed vegetables You can swap with broccoli, peas, or corn.
  • 1 cup shredded cheese Any cheese you prefer.
  • 1 cup bread crumbs For topping; Ritz crackers give great crunch.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the shredded chicken, cream of chicken soup, frozen mixed vegetables, and shredded cheese. Mix well.
  • Transfer the mixture into a greased baking dish.
  • Top with bread crumbs for a crispy finish.

Cooking

  • Bake in the preheated oven for about 30 minutes, or until hot and bubbly.

Notes

This casserole can be made ahead of time and stored in the fridge. It also freezes well; just thaw and bake when ready. Add a splash of hot sauce for added flavor.
