  • 1 lb boneless chicken breast Cut into thin strips.
  • 2 cups mixed vegetables (carrots, broccoli, green onions) You can adjust types according to preferences.

Sauce Ingredients

  • 1 cup chicken broth Low-sodium recommended.
  • ΒΌ cup soy sauce Low-sodium soy sauce can be used for a healthier option.
  • 2 tablespoons brown sugar Adjust for sweetness preference.
  • 1 tablespoon sesame oil For added flavor.

Preparation

  • Cook the lo mein noodles according to the package instructions, then drain and set aside.
  • In a bowl, mix the chicken broth, soy sauce, brown sugar, and sesame oil until well combined.
  • Slice the chicken into thin strips and prepare the vegetables.

Cooking

  • Heat a wok or skillet over high heat and add a little oil.
  • Add chicken strips and stir-fry until cooked through and golden brown.
  • Add in the vegetables and stir-fry for another 3-5 minutes until tender.
  • Pour the sauce mix over the chicken and vegetables, stirring to coat everything evenly.
  • Add the cooked lo mein noodles and toss well to combine. Cook for an additional 2-3 minutes to heat through.

Notes

Customize with leftover vegetables or different proteins like shrimp or tofu for variation.
