Ingredients
  

Main Ingredients

  • 200 g unsalted butter 1 3/4 US sticks
  • 200 g dark chocolate chips (7 oz) (Note 1)
  • 1 cup brown sugar loosely packed (175g)
  • 3 pieces eggs lightly beaten
  • 1 tsp vanilla extract
  • ½ cup plain flour (75g)
  • ¼ cup cocoa powder (30g)
  • 1 pinch salt
  • 180 g dark chocolate block/bar optional
  • 1.5 cups roughly chopped walnuts or other nuts

Instructions
 

Preparation

  • Preheat your oven to 180°C / 350°F (160°C fan forced).
  • Spray a 20cm / 8" square tin with oil, and line it with baking or parchment paper, leaving some overhang.
  • In a heatproof bowl, combine the butter and chocolate chips. Microwave in 30-second bursts until melted (it usually takes about 1 minute and 30 seconds). Stir until smooth.

Mixing

  • Add the brown sugar and vanilla extract, mixing well.
  • Then, add the lightly beaten eggs and mix until everything is smooth and molten.
  • Gently fold in the flour, cocoa powder, and a pinch of salt until smooth.
  • If using, stir in the chopped chocolate and pour the mixture into the prepared pan.

Baking

  • Bake for 24 minutes for a gooey center, 28 minutes for fudgy but moist brownies (this is a favorite!), or 32 minutes for a more cake-like texture.
  • If you did not use extra chocolate in the batter, reduce the cook time by 2 minutes.

Cooling

  • After baking, rest the brownies for 10 minutes before lifting them out of the pan.
  • Allow them to cool for at least 20 minutes before cutting.

Notes

Store any leftovers in an airtight container for up to 4 days or freeze for up to 3 months. For a richer flavor, use high-quality chocolate chips and cocoa powder.
