Ingredients

Main ingredients

  • 285 g dark chocolate melts (chocolate chips or chocolate block coarsely chopped)
  • 30 g unsalted butter
  • 125 ml cream (full fat, not low fat, not whipped)

Coatings

  • ½ cup desiccated coconut
  • ¼ cup unsweetened cocoa powder (Dutch processed is darker and looks “posh”)
  • ½ cup crushed peanuts (small, so they can stick)
  • cup sprinkles or similar
  • ¼ cup icing sugar / powdered sugar

Instructions

Preparation of Ganache

  • Place the chocolate, cream, and butter in a microwave-proof bowl.
  • Microwave on high for 4 x 30-second bursts, stirring in between each burst.
  • Cover the bowl with a plate and let it stand for 5 minutes.
  • Stir until the chocolate is melted and smooth. This mixture is your ganache!
  • Place the bowl in the refrigerator for 6 hours.
  • Put a dinner plate or tray that you will use to place the rolled truffles on in the fridge as well.

Rolling the Truffle Balls

  • Once the ganache is firm, take spoonfuls of the mixture and roll them into small balls.

Coating and Serving

  • Coat the rolled balls in your choice of toppings.
  • Serve the truffles right away, or store them in the fridge until ready to share.

Notes

Store the truffles in an airtight container in the refrigerator for up to a week. For best flavor, use quality chocolate and feel free to experiment with different flavorings and coatings.
