Ingredients
  

  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 3 cloves garlic minced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 pound fettuccine or penne pasta
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 4 ounces cream cheese
  • ½ cup butter
  • Chopped green onions for garnish ​

Instructions
 

  • Prepare the Chicken: Cut the chicken into bite-sized pieces. In a bowl, combine the chicken with 1 tablespoon of olive oil and 1 tablespoon of Cajun seasoning. Mix until the chicken is well-coated.
  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  • Cook the Chicken: In a large skillet over medium-high heat, add the remaining tablespoon of olive oil. Add the seasoned chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
  • Sauté Vegetables: In the same skillet, add the minced garlic and sliced bell peppers. Sauté for 2-3 minutes until the vegetables are tender.
  • Prepare the Sauce: Reduce the heat to medium. Add the butter to the skillet and let it melt. Stir in the heavy cream, cream cheese, and remaining tablespoon of Cajun seasoning. Cook, stirring frequently, until the cream cheese is melted and the sauce is smooth.
  • Combine Ingredients: Add the cooked pasta and chicken back into the skillet. Stir in the grated Parmesan cheese. Toss everything together until the pasta and chicken are well-coated with the sauce.
  • Serve: Garnish with chopped green onions and serve hot.
