  • 2 lb boneless, skinless chicken breasts fresh or thawed
  • 1 cup barbecue sauce your favorite flavor
  • ½ cup low-sodium chicken broth
  • 1 onion diced
  • 2 cloves garlic minced
  • salt and pepper to taste
  • 6 soft buns for serving

  • Place the chicken breasts in the slow cooker in a single layer and season lightly with salt and pepper.
  • Stir together the barbecue sauce, chicken broth, diced onion, and minced garlic, then pour the mixture over the chicken.
  • Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the thickest part reaches 165 degrees F.
  • Shred the chicken with two forks on a cutting board or right in the slow cooker.
  • Stir the shredded chicken back into the sauce, let it sit for a few minutes, and serve on soft buns.

Notes

For extra flavor, let the chicken sit in the sauce in the refrigerator overnight before cooking. Add sliced bell peppers for more color. Use thawed chicken for even cooking. Estimated nutrition includes one bun per serving.
