Ingredients
  

  • 4 salmon fillets skinless, about 6 oz each
  • ½ lb cooked shrimp chopped
  • 2 tablespoons cream cheese softened
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1 tablespoon fresh parsley chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil or melted butter for brushing

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a mixing bowl, combine chopped shrimp, cream cheese, Parmesan, mayonnaise, Dijon mustard, garlic, parsley, salt, and pepper. Mix until well combined.
  • Using a sharp knife, make a deep slit along the side of each salmon fillet to create a pocket (do not cut all the way through).
  • Stuff each fillet with the shrimp mixture.
  • Place stuffed salmon fillets on a greased baking dish. Brush tops with olive oil or melted butter.
  • Bake for 18–20 minutes, or until salmon is cooked through and flakes easily.
  • Optionally, broil for 1–2 minutes at the end for a golden top.
  • Serve hot with lemon wedges or your favorite sides.
