- 4 salmon fillets skinless, about 6 oz each
- ½ lb cooked shrimp chopped
- 2 tablespoons cream cheese softened
- ¼ cup grated Parmesan cheese
- 1 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
- 1 clove garlic minced
- 1 tablespoon fresh parsley chopped
- Salt and pepper to taste
- 1 tablespoon olive oil or melted butter for brushing
Preheat oven to 375°F (190°C).
In a mixing bowl, combine chopped shrimp, cream cheese, Parmesan, mayonnaise, Dijon mustard, garlic, parsley, salt, and pepper. Mix until well combined.
Using a sharp knife, make a deep slit along the side of each salmon fillet to create a pocket (do not cut all the way through).
Stuff each fillet with the shrimp mixture.
Place stuffed salmon fillets on a greased baking dish. Brush tops with olive oil or melted butter.
Bake for 18–20 minutes, or until salmon is cooked through and flakes easily.
Optionally, broil for 1–2 minutes at the end for a golden top.
Serve hot with lemon wedges or your favorite sides.
