  • 400 g cooked rice Preferably day-old rice for best results
  • ½ cup oil For frying
  • 1 teaspoon butter Optional for added flavor
  • 10 pieces prawns Adjust according to taste
  • ½ cup onion Finely chopped
  • 1 cup mixed veggies Use any available vegetables
  • 3 pieces eggs
  • 3 tablespoons soy sauce Adjust to taste
  • 2-3 tablespoons water To keep rice moist
  • ¼ cup spring onion Chopped, optional for garnish

Preparation

  • In a non-stick pan over medium heat, cook prawns in oil until they turn pink. Set them aside.
  • Set the heat to high. Add onions to the remaining oil and cook until they are slightly brown. Then, shift them to the side of the pan.
  • Crack the eggs into the pan, mix yolks and whites, and break them apart into small pieces using a spatula. Stir-fry until they’re cooked.
  • Add the cooked rice, mixed veggies, and soy sauce. Mix well, stirring every 5-10 seconds to achieve a light golden crust. Add one or two tablespoons of water to keep the rice moist. Cook for 5-10 minutes, depending on your stovetop temperature.
  • Stir in the cooked prawns and spring onions, then turn off the heat and serve.

Notes

To store, let the dish cool completely before placing it in an airtight container. It will stay fresh for up to 3 days. Reheat thoroughly before eating.
