  • 4 cups cooked rice (long or short grain) Day-old rice works best.
  • 2 Tablespoons butter For cooking.
  • 2 large eggs (whisked) Optional for vegetarian variant.
  • ½ cup chopped onion
  • ½ cup chopped carrots
  • ½ cup frozen peas
  • 1-2 teaspoons minced garlic To taste.
  • 3 Tablespoons lite soy sauce Adjust to taste.
  • ½ teaspoon sesame oil Can replace with oyster sauce.
  • Salt and Pepper To taste.

Preparation

  • Place the cooked rice in the refrigerator to chill until ready to use.
  • In a large skillet or wok, add the butter and heat it over medium heat.
  • Add the chopped onion and carrots, cooking for about 2 minutes.
  • Stir in the minced garlic and frozen peas, cooking for another minute.
  • Push the vegetable mixture to one side of the skillet, then pour the whisked eggs onto the other side. Scramble the eggs, then mix them with the veggies.
  • Gently stir in the chilled cooked rice until well combined.
  • Add the soy sauce and sesame oil, tossing everything to coat.
  • Season with salt and pepper to taste.
  • Serve warm and enjoy!

Notes

Serve it hot as a main dish or a side. Garnish with sliced green onions or sesame seeds for better presentation. For storage, keep in an airtight container in the fridge for 3 to 4 days.
