  • 1 lb lean ground beef
  • 4 cup mashed potatoes warm
  • 1 cup frozen mixed vegetables peas, carrots, and corn
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tsp Worcestershire sauce
  • 1 tbsp olive oil
  • ½ tsp salt
  • black pepper to taste

Cooking

  • Preheat the oven to 400 degrees F.
  • Heat the olive oil in a large skillet over medium heat and saute the onion and garlic until softened.
  • Add the ground beef and cook, breaking it up, until browned and 160 degrees F. Drain the excess fat.
  • Stir in the frozen vegetables, Worcestershire sauce, salt, and pepper until hot.
  • Spread the beef mixture in a baking dish and top with the mashed potatoes, smoothing the surface.
  • Bake about 25 to 30 minutes until golden brown. Rest a few minutes before serving.

Notes

Any prepared mashed potatoes work. Refrigerate leftovers within two hours and eat within 3 to 4 days. Reheat to 165 degrees F. Nutrition is an estimate.
