Ingredients
  

  • ¼ cup coconut flour
  • 4 large eggs
  • ¼ cup unsweetened almond milk or coconut milk
  • 2 tablespoons melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • Pinch of salt
  • Optional: low-carb sweetener like erythritol or stevia, cinnamon

Instructions
 

  • In a medium bowl, whisk together eggs, almond milk, melted oil, and vanilla extract.
  • Add coconut flour, baking powder, salt, and sweetener (if using). Whisk until smooth. Let sit for 2–3 minutes to thicken.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  • Pour 2–3 tablespoons of batter per pancake onto the skillet. Spread gently into a round shape.
  • Cook for 2–3 minutes, or until bubbles form and edges are set. Flip carefully and cook for another 1–2 minutes.
  • Serve warm with butter, sugar-free syrup, or fresh berries.
