- 4 large eggs
- ¼ cup unsweetened almond milk or coconut milk
- 2 tablespoons melted coconut oil or butter
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- Pinch of salt
- Optional: low-carb sweetener like erythritol or stevia, cinnamon
