Cake:
- 1 box yellow cake mix 18–18.25 oz
- 2 boxes lemon instant pudding mix ~4 oz total
- 4 large eggs
- ½ cup vegetable oil
- ½ cup milk
- 1 cup sour cream
- 6 Tbsp fresh lemon juice
Glaze/Icing:
- 2½ cups confectioners' sugar
- 3 –4 Tbsp fresh lemon juice or to taste
Preheat oven to 350 °F (175 °C). Grease two loaf pans.
In a large bowl, combine cake mix, pudding mix, eggs, oil, milk, sour cream, and 6 Tbsp lemon juice. Beat until smooth (~2 minutes).
Distribute batter evenly into the two greased pans.
Bake for ~50 minutes or until a toothpick comes out clean. Let cool in pans for 20 minutes.
Remove loaves and cool on a wire rack.
Prepare glaze: whisk together confectioners’ sugar and lemon juice until smooth. Spread glaze over cooled loaves and let set. Optionally, garnish with lemon zest.
