Ingredients
  

Cake:

  • 1 box yellow cake mix 18–18.25 oz
  • 2 boxes lemon instant pudding mix ~4 oz total
  • 4 large eggs
  • ½  cup vegetable oil
  • ½  cup milk
  • 1  cup sour cream
  • 6  Tbsp fresh lemon juice

Glaze/Icing:

  • 2½  cups confectioners' sugar
  • 3 –4 Tbsp fresh lemon juice or to taste

Instructions
 

  • Preheat oven to 350 °F (175 °C). Grease two loaf pans.
  • In a large bowl, combine cake mix, pudding mix, eggs, oil, milk, sour cream, and 6 Tbsp lemon juice. Beat until smooth (~2 minutes).
  • Distribute batter evenly into the two greased pans.
  • Bake for ~50 minutes or until a toothpick comes out clean. Let cool in pans for 20 minutes.
  • Remove loaves and cool on a wire rack.
  • Prepare glaze: whisk together confectioners’ sugar and lemon juice until smooth. Spread glaze over cooled loaves and let set. Optionally, garnish with lemon zest.
