Easy Mango Mojito
Mango pulp, muddled mint, and lemon topped with club soda for a bright, non-alcoholic drink.

Main Ingredients
- 1 lemon cut into wedges
- 1 cup mango pulp store-bought, thawed if frozen
- 3 to 4 tbsp sugar to taste
- 2 tbsp fresh mint leaves
- 2 tbsp freshly squeezed lemon juice
- 1 cup club soda
- ice cubes
Cooking
Add the base. Put the mint, sugar, and lemon wedges in a tall jug.
Muddle. Muddle and twist a few times, taking care not to overdo it.
Add mango. Stir in the lemon juice and mango pulp until the sugar dissolves.
Chill. Add ice cubes and stir until cold.
Top. Pour in the club soda and stir once.
Serve. Garnish with mint and lemon and pour into tall glasses.
Substitutions: Blended ripe mango can replace the pulp, and sparkling water can replace the club soda. Add light rum for a cocktail.
Tips: Start with 3 tablespoons of sugar and taste, since pulp can already be sweetened.
Storage: Drink within a day. Keep the mint separate to avoid sogginess.
