- 1½ pounds boneless skinless chicken breasts or thighs
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 3 cloves garlic minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon paprika
- Salt and black pepper to taste
- Optional: fresh parsley or feta for garnish
In a small bowl, whisk together olive oil, lemon juice, vinegar, garlic, oregano, basil, paprika, salt, and pepper.
Place chicken in a resealable bag or shallow container and pour marinade over. Seal and refrigerate for at least 2 hours.
Preheat grill (or oven to 400°F / 200°C).
Remove chicken from marinade and cook on grill for 6–8 minutes per side (or bake for 20–25 minutes), until internal temperature reaches 165°F (74°C).
